Audio HiJack Pro - a brilliant application that allows you to capture any sound that goes through the sound part of your Mac. So you can use it to record the sound of music DVDs (that you legally own) to add to iTunes or transfer those old vinyl LPs to iTunes. Saved me time and time again - used to have a free version but now you have to pay but worth the $US25
Batchmod - sort out permissions

Sometimes permissions gets screwed up on files, or you get some software where the writer had not been able to write the software properly to run under a user - it will only run under the Administrator. If you know what you are doing, you can use Terminal to type Unix commands to sort out permissions. But for the rest of us... there is Batchmod. You need to know a little bit about what you are doing but it does the job...
Coconut Battery - just what state is your laptop battery in?

A neat little tool to find out what percentage of the original charge your laptop battery in, find out how many cycles it has done, etc
iPhoto Library Manager - manage your photos

iPhoto is a great application. But it has its disadvantages. It is so easy to download your photos. But you have those ones of the raging party you had at your place which you want to keep in iPhoto but you don't really want them showing up in your school stuff! iPhoto Library Manager is the answer. It allows you to have multiple iPhoto Libraries - one for school, one for home, one for interests. Just use iPhoto Library Manager to select which Library you want BEFORE opening iPhoto. And you don't have to have your iPhoto Library where iPhoto wants to put it. You can put it on an external hard drive, etc Very handy
SeisMac - have fun with earthquakes!

Looking at earthquakes or Civil Defense? This neat little app makes use of the motion detector in your Mac (the part that tries to prevent damage to your hard drive and other moving parts) and creates neat graphs. You can bump the computer to generate different size graphs, do all sorts of interesting stuff
Pixelmator - haven't got time to learn Photoshop?
Haven't got time to learn how to use Photoshop. This English image manipulation will do it for you and it costs a whole lot less. A little different in the way it works, but once you get the hang of it... Good video tutorials etc.
Photopresenter - got that big end of year concert coming up?

Got a big night coming up where you want to show off your photos. You can use iPhoto and make a Quick Time Slideshow but this does it with a little more style and pizazz. Very cool.
Onyx - time to give your Mac a spring clean

I use this a lot to fix problems and get some speed back into a Mac that has slowed a little. Does all sorts of clean up stuff. Checks your hard drive first and then you can get it to do usual maintenance and clean up your Mac with just a click. Oh to have something as easy for a PC!!!
Delocalizer - Looking for a little more hard drive space?

When your Mac OS system is installed, it also puts in support for all sorts of other languages, which takes up a lot of space - and do you really need support for Norwegian on your laptop? You can tell Delocalizer what Languages to leave on the system - basically English in a few different forms and it will clean out all the rest, gaining quite a bit of space back - handy on older computers with smaller hard drives.
